About the Author

DAVID DALEY is of Jamaican parentage and grew up in Coventry, West Midlands working in the family catering business (Gwen's Catering with his mother Gwendolyn, father Lyndon, and his siblings). David passion's for Caribbean food and culture has been inspired by his parents' cooking and frequent visits to the Caribbean to see family and friends. David is the proprietor of Roti Kitchen, Caribbean caterers specializing in events and outside catering (www.rotikitchen.com and www.facebook.com/rotikitchen).

Gwen was born in Mandeville, Jamaica and was first noticed for her culinary excellence at the aged of 12 when she won a baking competition at her local school. This earned her a scholarship (specialising in cookery) for a college in Montego Bay.

Gwen moved to the UK in the early 1960's and settled in the West Midlands. With the help of her family Gwen ran her own Caribbean catering company for over 40 years. Gwen is now retired, but continues to run a cookery club for adults and children in her local community.

I just recieved this today! Altough I have not had the chance to make any of the recipes I am excited about doing so. i intended to just flick through but as soon as I started reading one recipe I couldn't stop.Being of caribbean desent I was a lil sceptical of the authenticity,but I needn't of been! The recipes were bang on and taught me a lil too, it was almost as if I could taste it as I was reading.It is a very concise book I especially love how at the beginning there is a glossary of common caribbean ingredients and cooking untensils. It lists thorough informationon both. Also in the recipes it also lists all the different names for the dishes that may not be known to most which I found helpful.The background information and tips at the beginning of each recipe are a nice touch and at the back of the book it lists websites of where you can obtain ingredients to make the dishes if you don't have an ethnic store readily available :)All in all I am excited about this book,it is a breath of fresh air and can't wait to try some of the recipes i've never made and tweak the ones i already do.

I really love this recipe book (thanks for the recommendation Pixie!). My mum is originally from Trinidad, so I recently cooked the Chicken Pelau recipe for her which sent her into rapturous reminiscences. "I'd forgotten how good this was" and "THAT'S the flavour I had forgotten" were typical comments.The book has a really wide selection of recipes and explains which island each recipe is from. Although a number of ingredients used may not be available in the UK, or perhaps can only be found in specialist grocery shops, the book describes exactly what these ingredients are, and makes helpful suggestions of more everyday ingredients which can be used instead.With the liberal use of Scotch Bonnets (extra hot chillies), some recipes are a little on the warm side, but you can always cut back on the amount of chilli you use.On a final note, I must comment on the Peanut Punch recipe. OMG! If you are not counting calories and like peanut butter, you really must try this (use the version which includes rum). Its like a sweet alcoholic peanut butter milkshake which is far nicer than it sounds.

Its a shame as the recipes seem authentic. No photos, just steps to follow. So as it was bought for a young teen, I think she may be disappointed. This food cuisine is a little underrepresented where books are concerned. Wished I bought Ainsley's Caribbean food book now which includes pictures - wetting the appetite. The only thing is it has lots of new recipes - which are great, but not authentic to the culture and traditional cuisines.

This book has no pictures but it doesn't need it. The book has simple, clear step by step instructions, hints and tips. It has reccipies from America and the carribean. My favourite curry goat, rasta pasta and oxtail. For simple and easy traditional food this book is win win!

We are not Caribbean. But walking past a fast food outlet several weeks ago our interest was aroused again after giving up on caribbean after trying various recipes over the years. What a great book No pics no food porn. Just real Carribean recipes. A great book the cakes are lovely. The mains wonderful. The tips good.This is a cheap book relatively speaking, but one of the best we have bought. We love the chick pea and potato curry and piccadillo and many more Do buy and try So for value, clear instructions, success of the recipes we have tried 6 out of 5 GREAT BOOK

I haven't read all the book yet but of what I have read I have enjoyed and have already learnt some new tips for the way I cook certain dishes. The layout and wording is straight forward and an easy read. My only criticism would be I think there should be some pictures in it, even if it was just every other page because the book just lacks any sort of character due to this, especially with it been a cooking book, it would be nice to see what the meals expected to look like. I would still recommend this book though due to great recipes and information surrounding ingredients background etc.

The recipes are authentic. I really do like many of them. (curried goat, rice and peas, picadillo, etc.) Not a fancy book but VERY informative. Costs almost nothing. A real steal/deal.

Eigentlich war dieses Kochbuch nur als Ergänzung zu meinen beiden anderen Kochbüchern der karibischen Küche gedacht. Nachdem ich die Rezepte durchgelesen und auch schon einige Gerichte nachgekocht habe ist für mich klar, daß dieses kleine Kochbuch DAS KOCHBUCH ist. Freunde der karibischen Küche sollten dieses Werk besitzen, es ist der Schlüssel zum absoluten Geschmackserlebnis. Man fühlt sich wirklich wie im Urlaub! Ich kann das Kochbuch nur empfehlen und es hat in meiner Küche einen besonderen Platz erhalten.

Very good cook book. Lots of new ideas. Clear directions on how much to add, how long to cook, when to add, etc. I like spicy foods and this book has a number of recipes that fall into that category. I try a new recipe nearly every weekend and thoroughly enjoy process with this book to guide me.
