Trying to reduce my meat intake. Bought this book as I love pulses and wanted to learn better how to use them and cook healthy balanced meals I will enjoy. I just love it. It is full of ideas and simple recipes that are easy to cook. I will be slowly working my way through it enjoying my adventure. The book also explains how to cook from dried form or quaunties if using canned pulses instead.I am unable to eat cheese and need to keep my use of dairy products down, so another plus us that there are loads of recipes without cheese and most that include it can be done omitting it.I bought a very good used copy, but even the new version is well worth it. It's the kind of book you will keep dipping into for many years to come. I'm eating even less meat than planned thanks to the ideas in this book.

I bought this book as I was looking to introduce more pulses and lentils into my diet to replace the bog standard rice, potatoes or pasta side dishes that used to accompany my protein choices of chicken or fish (I am not a vegitarian). I have mainly tried the bean salads and soups so far. The salads are delicious and so easy to prepare and really make a tasty difference to the usual carbs I used to have to eat. I love soups and the healthy bean and lentil soups on offer are very heartwarming and pleasing.Great little book, easy recipes and most of them very tasty and prepared in minutes. Lentils and beans get such bad press but I wish I had been introduced to these recipes years ago.

I bought this book to replace a very fragile paperback copy I have owned for as long as I can remember. Some things have been omitted from the original however if I had only ever owned this copy it would be of no detriment. An essential book for vegetarians and also for meat eaters, several of my friends regularly use recipes that I have gifted them from this book. There are no pictures but I don't have a problem with this. love the courgettes with chick pea stuffing and the lentil lasagne is just heavenly. Well instructed simple recipes.

I like Rose Elliot's recipes and saw this book recently for a ridiculous few pence. Second hand, but in virtually new condition, so it's replaced my long lost copy from years ago. It's packed full of information about pulses. How to prepare and cook, pitfalls, nutrition etc.The recipes are easy to follow and can be adapted if you want to use canned pulses rather than go through the pre soaking rigmarole. No obscure ingredients and lots of inspiration for tasty and well balanced vegetarian meals. It's slightly dated in appearance, with no colour photos, but it's still a delight to use.

This recipe book is great, this is my third edition I have bought for friends and family who are needing to change their diet for health reasons or have just become . This book was bought for me, as a vegetation. I have bought to having to introduce friends and family to it, after being given this book myself. I love the loaves, my favourite is the walnut and lentil loaf, I have fed this to many vegy's and meat eaters and they all love it ( I usually put more garlic in and a bit of chilli) SPREAD THE WORD!!

I bought my original copy over thirty years ago. At one time it was the mainstay of my cooking and over the years has still been well ussed to the point where numerous pages were falling out all over the place and the whole thing had become totally tatty. Consequently I splurged on this replacement. This latest edition is much more attractive and the language and tone has been updated (quiche instead of flan, burger instead of cutlet, etc.). I can thoroughly recommend this book to anyone wanting to use beans as a valuable source of protein in their diet and so pleased it is still in print.

I have had Rose Elliot's Bean Book since it was first published in the 1970's and in hard times it was a godsend but, quite apart from that, the recipes are completely delicious - and I am NOT a vegetarian. Try the Continental Lasagne and you will begin to see why people are quite happy not eating meat. If you need to watch the pennies you can't beat these recipes and they aren't nearly such a fiddle as you might think - except the rissoles which I wouldn't bother with again! I would not hesitate to recommend this book to anyone - even my children ate everything.

A go-to reference for vegetarians
Since beans pop up so much in vegetarian cuisine, it's nice to have a resource handy for fancy things to do with them when company comes over. I've fed the toad-in-the-hole and the lentils over fennel to guests of all dietary stripes and never once had someone complain they missed meat at the meal. The informational section at the front is a must-read: Rose Elliot's bean-by-bean description of all the legumes out there, how to use them, how to cook them, and how to find them if they're hard to come by, will inspire many recipes beyond those contained between these pages. I haven't really tried the salads (I'm not a big fan of salad), but they do look like tasty good things to bring to potlucks if the mood ever strikes me. I first read about this book in "Voyaging on a Small Income" by Annie Hill--a low-cost sailing cruiser's must-read as well--and Annie Hill was right on the money for the usefulness of the recipes in this book. However, I've found that some (like the aforementioned toad-in-the-hole) have been difficult to adapt to pressure cooking, and many of these recipes do require time in a conventional oven or with access to AC power for a food processor, so if you're planning on using this cookbook for your cruising menus, keep that in mind. Otherwise enjoy! Go green--eat a bean!
Essential and a bit more especially good for vegetarians
I was finally glad to get the book. Took awhile because Bolo don't know how to read Norwegian characters on my address. But I eventually got it. The book has all the Essentials to the beans Components. Information on all kinds of beans. I am not bothered for the lack of photos, because it's the context that matters. The recepies are quite easy to make and mainly for vegetarian. some are for vegans too. Very varied so you'll find there everything you wish for.A lot of information on all sorts of beans and really this book has firstly been published in the 1970's and still is very popular, and not for no reason. It has essential information on beans and other things like their vitamins and a little history there too. Really. it's more than just a book! Highly recommended!
