I use this book multiple times during the week - haven’t found a dud yet and there are several family favourites (miso chicken is one!). It’s been so useful with a newborn - just chuck everything in a roasting tin and the oven does the work. Simple recipes but you still get great tasting results. Most ingredients I’ll have already which has is a bonus too. I recommend this series to everyone!

If you’re having trouble thinking of new exciting recipes that involve basic skills when you get in from a long day, look no further than this book. Most recipes can be prepared in advance and use few pots and dishes - a perfect book for exploring flavours that involve less effort for an impressive result!
5.0 out of 5 stars Best cookbook I’ve ever bought.
I have a LOT of cookbooks. Like 40 or 50. I love to cook, experiment with flavours, and discover new ideas. The irony of having all these cookbooks is that I rarely actually follow a recipe more than a few times at most before I start to ‘riff’ on it - chucking in a bit of this or that, swapping things out and in, etc.I saw someone recommend this book on Twitter and was intrigued. Of course I don’t *need* a new cookbook, but what the heck...Well, I’m happy to report that this is actually my favourite cookbook ever.Why...? Well...- a huge variety of flavours and inspiration, from around the world. It’s not a book where you kind of think ‘I’m getting a bit bored of this country’s flavours’ - they’re all wildly different, and all the better for it.- ease of cooking. This is ideal for a busy family. Rarely any fancy ingredients - once you’ve bought maybe half a dozen things, almost all of which you’ll get in your local supermarket, you literally just chuck everything in a roasting tin, let it cook, sometimes chuck one or two more things in near the end, and serve.- new and interesting flavours too. I have learned a lot of unusual flavour combinations over the years, but quite a few of these recipes were of the order of ‘wow. I had no idea how delicious those two things would be together.’ Halloumi and walnuts - awesome. Salmon and hazelnuts - amazing. Black beans and feta - marriage made in heaven. So, whether you’re new to cooking or more experienced, I reckon you’ll still discover some new combinations either way. Not to mention the fact that with a few of the recipes, I’m starting to do my ‘riffing’ thing. Haven’t got spinach? Pak Choi will work - no worries...- with a daughter who’s mostly veggie for environmental reasons, and the rest of us trying to at least reduce our footprint a bit, about half the recipes are veggie or vegan, with the rest encompassing all sorts of meats, it has also worked for us in terms of adding several new *really* tasty veggie recipes to our repertoire. There is *zero* sacrifice in having these, and some are among my all-time favourite meals. And the whole family love all the recipes, so in fact *none* of us feel like we’re missing out.I think I’ve already made about a quarter of the recipes in the book, and none have disappointed. Of course not every one is ‘Wow.’ But they’re all very tasty. And I’m still excited to try several more in due course.In short, it’s a fantastic addition to any cook’s shelf, and I can’t recommend it highly enough.

In our kitchen we have shelves full of Jamies, Delias, Nigellas, and countless other TV cooks' cookbooks (including a hairy biker or two). But I've discovered Rukmini Iyer and put all those behind me, because Rukmini with her superb, easy to follow, cook in minutes wash-up in less, tasty roasting tin meals is my new kitchen goddess.Now at this point I have to admit that I've actually only tried four of the dishes from her "Roasting Tin Around The World" book: one meat, one chicken, one fish and one veggie, but all of these shared a common denominator: they were easy to assemble [note: assemble not prepare], they cooked quickly, they tasted great and there wasn't enough washing-up to start the house-elves [or the kids as we call them] complaining. But, while I've only tried four dishes so far this isn't one of those cook books [note "cook books" not "cookery books"!] where of the seventy or so recipes half fail the too-much-like-hard-work/too-complicated test, a quarter require ingredients never seen in the local supermarket, some require overnight marinating which you only find out when you get to the third step thereby failing the we're-hungry-now test, and all need an army of sous-chefs to bring it together at the last moment [how many hands do these guys think we have?] and a battalion of washer-uppers just to keep the kitchen surfaces clear of collateral debris and a supply of clean pots and pans flowing. Which leaves a couple that you might consider cooking when you next have time, meanwhile it's going to be scrambled eggs again for four.No, Iyer knows a thing or two about modern life, about the difficulties of feeding teenagers, and about keeping meals interesting; and this book is stuffed full of easy recipes that will work for weekdays for the family, romantic weekend nights a deux, and dinner parties once lockdown eases; with ingredients that you can find, that cook quickly, and require minimal washing-up; and if the beautiful pictures of the dishes [note: you won't find cover to cover pictures of the personality chef and "their" kitchen to die for here, it's the food that counts here] are anything to go by then this book is going to keep us going for a while yet [before we move onto her next one].And that's why Rukmini Iyer's my new kitchen goddess and this book is five stars.
Probably one of the most worth it cookbooks I've ever bought
What an amazing book! This has made our dinners so much easier, we are a family of four with two hungry teens who are also raised to eat a wide variety of foods. The ease of making such delicious meals is unsurpassed. Highly recommend this book, but a heads up that this is a UK on the book so you have to be comfortable using metric measurements and checking the pan sizes etc

So many wonderful meal ideas
Only received this a couple of days ago and already I've made two meals from this book. I skimmed through a few pages and quickly found recipes that used a bunch of ingredients already in my fridge. This is making mealtime with two littles so much easier, as I can put everything in a pan, pop it in the oven in advance and dinner's ready when we are.

I ordered the book because somebody shared a chicken pan recipe with me After receiving the book i looked through it and the chicken is literally the only recipe that appeals to me I’ll never use it My friend is in England and loves it
Delicious
I cooked most of the vegetarian recipes in this book and I recommend it even if you don’t eat meat. Rukmini’s recipes are so great, flavourful.
