For a novice bread maker yet accomplished cook, this book had the right pace and tone. This, without the faff and over elaborate approach taken by some authors and broadcasters.

This book has so many great recipes in it the only problem you may have is "where do I start?".If you are a complete novice though this question is answered for you as Paul recommends you try the wheatsheaf bread first.I have a breadmaker and although I love the simplicity of it, my loaves were always dense and heavy. Now that I have tried a few of the recipes from this book I am embarrased that I ever served these poor efforts to my family! Since buying this book none of my bread creations have failed, everything comes out light looking 'shop bought'.My biggest compliment was when my husband refused to believe that the bread we were eating was made and not shop bought, and my daughter ask me to make loaves everyday for lunch.Everything in this book is easy to undertand with step by step instuctions to guarantee success, there are a lot of tasy sounding variations for your money too. Sweet and savoury breads from different cultures too including croissants, nan, pitta breads, danish pastries, scones, beer bread! If you buy this book, my biggest tip would be - try the baguette recipe first, a great recipe for bread that practically makes itself and the best bit is NO KNEADING.Get rid of your breadmaker, all these can be made with less than 20 minutes effort - you won't regret it! (p.S go and get some fresh yeast from the bakery dept in Tesco's)

Good book, but the title is misleading. There are not 100 great breads... unless you count pastry (croissants, apple pie, danishes) and cakes (muffins, scones) as breads.Nevertheless the instructions are clear, and the recipes work.It would be nice if instructions were given to make your own live yeast instead of the direction 'ask your local bakery to give you some or buy it live', especially as all the recipes assume you are using live yeast. But substitution ratios to use dried yeast are given in the information in the first few pages so it is possible to get good results even with dried yeast.

I bought this book for my dad as he's been baking a lot now that he retired, he enjoyed this book a lot! We tried the basic wholemeal recipe together and the bread turned out great! It's really easy to follow and the result was great, fluffy delicious bread. The only two more complicated to find ingredients I found in the book, were malt extract (available at most health food stores) and treacle (available at some supermarkets). The rest is all super easy to find at any supermarket. My dad's really excited to try other recipes, particularly the dark rye and beer bread!

This is not the best bread making book. Paul Hollywood goes to great lengths on TV to explain and emphasise the importance of kneading / the use of yeast yet this books lacks the flair I was hoping for from this famous baker. His recipe for Foccacia (and there are several of them!) differs to that of the recipe found on the web under his own signature - and I mean the quantities of water etc, not flavoured ingredients. It's confusing especially when he makes such a big deal of it on the TV series - Great British Bake off. How can he change his mind on the quantities of water needed to make the same bread recipe?! It mentions nothing in the book of the dough being "hard to handle" and very wet. I'm glad I didn't pay full price for it. No trace of one single recipe for Sourdough which I found very surprising seeing as it is so popular now. And yes I agree with the previous reviewer- there are too many 'other recipes' not really related to bread or dough. I would have thought he would have at least included his recipe for his famous iced fingers which are delicious, but no, it cannot be found in the book. This book is ok but just not the best. There are definitely better bread making books out there (try Dan Stevens - River Cottage for example) Shop around and buy this only if it's at a bargain price.

The recipes in this book are really good. There aren’t many that I wouldn’t want to have a go at making. I’ve got a bread machine but nothing beats making bread with your own hands. I highly recommend this book.
Great book, but...
Great book. I have one other Paul Hollywood bread book and love that as well. However, page 107/108 was torn out of the book. I don't care much for fruit in my bread so this is not a big problem with me - I won't return the book because of this. In fact, I am going to buy two other P. H. recipe books next month. km
I like it
I know some people were having problems with the measurements. I guess that is an old version because it now has both types. The only thing I wasn’t happy with, was not all recipes have photos. That’s just something I like though. Other than that I’m glad I bought it.
Simple recipes.
Easy to follow recipes with metric measurements. You need a kitchen scale!
