The packaging describes this as a 'fermented bean paste' although the ingredients don't actually list any soy beans (or any other kind of beans) so I'm not sure what's fermented here exactly - I think it must be the wheat flour which can be fermented because of the gluten. The sauce is a deep dark red colour like a concentrated tomato puree, and the consistency is similar to ketchup meaning that it dispenses well from the squeeze bottle but doesn't run. It has a very strong smell when you open it, not just 'umami' but a little like a strong anchovy sauce in particular. Its pretty perfect level of heat to use as a chilli sauce/chilli ketchup as a condiment - its hot but not painfully so.

I first tasted this sauce in Itsu, and found some on Bolo. Use it as a condiment or add to stir fries or even soups for a hot umami kick. I just wish it was cheaper, as I’ll get through this bottle quickly.

I recently discovered this sauce at a well known sushi restaurant and I’ve been obsessed with it ever since. This brand is different from the one store the restaurant but is very similar tasting, but is a tad more acidicMy only real criticism is that is overpriced,4/5
