This allows the oil to penetrate deeply into the pores of the iron. This seasoning process achieves a seasoned finish that would take many months of home use to achieve. Sometimes during this process, the seasoning oil can collect and create a bubble or slight drip at the bottom of the pan as it’s hanging through the production process. And that in turn can turn brown as it’s processed through the seasoning ovens.  This brown spot is not rust but in fact, carbonized seasoning and will darken with use.  The factory seasoning process makes Lodge cast iron products ready to use right out of the box, and the product over time “Just keeps getting better”. After cooking, clean with a stiff nylon brush and hot water. Using soap is not recommended, and harsh detergents should never be used. Towel dry immediately and apply a light coating of oil to utensil while it is still warm. Cast Iron, like your grandmother used, still ranks as one of the best cooking utensils ever made.     I bought this dutch oven mostly for baking bread, and future (car) camping trip cookware. The lid can be used as a separate skillet with two side handles. The dutch oven has been great for my bread, I got a nice even bake first time using it. Be sure to put the cookware in the oven at the start of the preheat so it warms slowly with the oven.The cookware is heavy (as it should be) and comes pre-seasonsed by lodge. Mine did not feel sticky out of the box. It comes with care instructions.Overall I think worth the price, solid, hopefully durable, time will tell on that.

    I have been cooking with Lodge cast iron for about 7 years and own 8 pieces from their inventory. The Double Dutch Oven is my favorite Lodge cookware due to its versatility.When using a dutch oven, I usually sear the meat first to add flavor. Usually, this requires searing the meat in several batches. The best part about the Double Dutch is that you can sear the meat in the big pot and in the lid simultaneously, thus reducing the time needed to brown the meat by half. Since the lid is then used for the braising step (after deglazing), you're not increasing the number of items to be cleaned later.I like the lid so much that I often use it by itself for pan frying. Due to the smallish size (about 10 inches in diameter) and the inherent properties of cast iron, the lid can get incredibly hot if you want it to. Perfect for cooking a steak (it puts on a better crust vs my 12" Lodge skillet). I've even used it as a pie pan in a pinch. When properly seasoned, the lid also works great for cooking eggs without them sticking. A seasoned cast iron pan is the original nonstick and will outlast any synthetic-coated nonstick pan in the market (and without the toxic fumes).When used as a Dutch Oven, it works like it should. It retains heat well and cooks evenly. There is very little steam that escapes. The smaller 5qt capacity (vs a 7qt Dutch Oven, which I use less now that I've got this one) is also better for cooking moderate amounts of food. Generally, you want little empty space when using a Dutch oven.In response to the reviewer who has problems getting the lid off, I suggest the following. When setting the lid on the pot, don't align the handles of the two. This will allow you to remove the lid easily, without having to worry about injuries. I've owned another Lodge 5qt Dutch Ovenwith a more traditional handle - I don't miss that one at all...nor do I miss not having a standalone 10" skillet.UPDATE (December 2010):I've been using this thing for over two years now, several times per week. It is still my favorite, but ever more so. Here's one more thing that you can use this for: Baking super awesome bread that rivals anything you can get at your bakery. One of the secrets of making great rustic breads with a thick chewy/crunchy crust and great oven spring is to use a lot of steam for the first 10 minutes of baking. Bakeries use a steam-injected oven. For us at home, using a covered pot, such as this one, is the easiest way to replicate the effects of a steam oven. After shaping a boule, I place it on the lid, cover it with the main pot and let it proof (so the whole pot is upside down). When the dough is ready, I score it and place the covered pot on a preheated stone in the oven for 10-15 minutes. Then I remove the lid and let the top crust brown while the interior reaches the proper temperature. Depending on your oven, you might have to remove the bread from the lid halfway though cooking so the bottom doesn't burn - I usually put it on a cool baking tray on a rack without a stone. It's a minor inconvenience, but it's easier than trying to steam an oven with boiling water, ices cubes, mister, etc. And the results can't be beat!

    I use this only for bread baking. I love how heavy it is and good quality. It is the perfect size and works great in the oven. I season it about every 5-6 times I bake bread with either tallow or avocado oil and it has kept a great black color. I haven’t experienced any chipping or the coating coming off with how I have been using it and seasoning it. Definitely worth the money

    Haven’t used it yet however it looks great! It’s big, heavy, seems very durable. The color is nice and the handles are helpful. I am satisfied with my purchase. I bought this to possibly make some bread in and of course other delicious foods. I chose this one because I was looking at a different Dutch oven and the description said it could go up to 500 degrees but the paper only said 400. So I thought this would be a better option. I am glad I chose this one rather than the other one . I also quite like the little dots under the lid which supposedly helps with heat distribution.Update: I’ve used it a few times: I made soup, sourdough, and shepherds pie. It turned out very well. I am impressed and very happy with my purchase. I’ll be using this for a lot of things. I’ve left it on my island not even put it away cause I wanna use it a lot

    Cast iron, in general, is a joy to cook with — a kitchen standard that actually adds iron to your diet! This Dutch oven has a special place in my heart because it makes superb crusty bread, chili, baked beans, roast chicken etc. This Dutch Oven will be around for at least the next 100 years and I like that Lodge is made in North America. I use olive oil on it once in a while.

    Lo utilizo para hacer hogazas de pan y ayuda a hacer una cobertura muy firme. Tener cuidado ya que es muy pesada, al estar en el horno a altas temperaturas es muy probable que te gane el peso y te puedas quemar. La calidad es excelente y el tamaño es el adecuado.

    Arrived today in great condition in very good time from the US, we have several pieces from lodge and we use them all the time, if you look after them they won't go rusty , we got the dutch. oven for baking bread.and are really pleased with this purchase . it arrived well seasoned but we did it twice more in the oven and its ready to cook in.
