I researched a hack to make my own plant based eggs at home re: "Just Eggs" This was the exact bag of dried mung beans/golden lentils that the originator of the recipe uses, so I ordered. Received on time and prepared them as per recipe and they do not disappoint! I really like that I have more control over what ingredients go into my plant based eggs and there is nothing more than these dried mung beans and spices that make up my eggs. They cook up great and are just as delicious as the store bought "Just Eggs", I just get to make mine a whole lot cheaper and I believe healthier.

Updated Review:I decided one day to randomly buy some organic mung beans and realized that this non-organic one is vastly inferior. The organic mung bean that I bought barely had any outer green skin when I went to wash it. However, this one is filled with it and I usually end up washing it a lot more. Also, the water is much murkier when washing this one. In terms of value though, this one is hard to beat. However, I think I'll end up buying the organic beans from now on.Previous Review:I thought twice before buying this because of the negative reviews about the strong odor. Rest assure, that is no longer the case. They must have had a bad batch at one point or something, but my batch is perfect. I opened the bag of beans and immediately took a big whiff, but no strong odor whatsoever. Super amazing value compared to my local market. I used the Mung beans as the main ingredient in a vegan scramble. It works beautifully! These were the best price for the size and since it was my first time buying/tasting mung beans, I wanted the lowest price.

My Ayurveda doctor and later my nutritionist suggested a cleanse once a week using just mung and cauliflower rice, flavored with any grounding spices I’d like (curry blends of any kind). So far it’s working beautifully and I sprinkle coconut flakes for added fat instead of cooking with ghee or oil. 6 oz mung, 10 oz cauliflower rice and 1 oz unsweet coconut flakes plus spices to taste equals a perfect meal 2 times a day & for the breakfast the portions are 4 oz rice, 6 oz mung & 6 oz cauliflower rice. That follows bright line eating per my portions following the boot camp. You can also have a cup of broth at lunch and dinner, making it more a soup than a porridge. I go heavy on the turmeric and garlic in my broth. Or I do white miso.

I was unable to find yellow mung beans locally. I found green mung beans, but they were $9.00 a pound, so these were really a find. I have to admit that they smelled awful when I opened them, but after rinsing them according to the directions, they were great. I have used them in various kitchari recipes, and they were delicious.
