    Just getting into chocolates. And from what I could find on the internet, this chocolate was the best for the dollar. I wanted an 11lb block so it would last a while. When the order came in, It came in a freezer pack. bubble wrapped, in a reinforced box. The condition of the chocolate was in perfect condition. After admiring the chocolate and smelling it, feeling it.. holding it. I said well it's that time. So I started to break it up into smaller sizes. I broke it up into about 3 lbs chunks... I then wrapped the chunks in plastic wrap, and the vacuumed sealed each chunk in it's own vacuum pack... Labeled it etc. and put it away in the pantry. Away from light and temp changes...So now when I bake or do candies, I break out one of the bags and usually temper about a pound at a time... and do what ever I need to do. The balance of that bag gets rewrapped and vacuumed back up till next time... Since I am not a professional chef or chocolate maker or candy maker but a blogger with a fixation for chocolates. This works out the best for me... My first by was the 70% dark then I order a few weeks later a block of milk. But something to think about is the shipping. It is expensive to ship.. So try to order maybe two blocks at once... One milk, and one Dark or what ever. that might save you some shipping... This is a pretty high grade chocolate, and everyone that has eaten my recipes from this chocolate all have commented about how much better everything is now, and they are asking what are you doing different...There is a saying that there is no magic that happens in a 350 oven it's the products that you put in there that makes the difference... So buy this stuff, it's well worth it...

    Good for occasional snacking and for chocolate covered strawberries or pot dé creme but the package had crumbles of chocolate when damaged during shipping. First time this has happened with the 5kg (11 lb) bar.Still our favorite chocolate- 70% dark.

    The 70% is, for me, a great balance in chocolate and sweetness as I prefer darker chocolate. The 11 lbs came well wrapped with a slight bloom around one of the edges and an expiration of July 2022. I used a mallet and a wide screw driver to break up the block. I wasn't concerned with the size of the pieces as I gifted most of it away to my siblings. I knew I wouldn't consume all 11 lbs. before its expiration date. And Callebaut 70% makes the best chocolate chips cookis - hands down. Not too sweet, but with a rich, deep chocolate flavor.

    Wow, this is a lot of chocolate. And you have your hands full when you tackle this eleven pound block of amazing goodness. My wife and I are incorporating this into a health regimen. As it was a chore to break into bite sized chunks, I chose to melt down blocks and pour into silicon molds, set into the freezer, break into squares, and package in freezer bags for easier storage and consumption. (Used a double boiler at first, but found the microwave defrost setting easier). It took a bit of effort, but it was worth it. This 70% cocoa chocolate is delicious and not at all bitter like other “baker’s” chocolate we’ve tried. You won’t be disappointed if you like dark chocolate.

    The uses above haven't mentioned that this block is deadly good - can be eaten as a "chip off the old block" (great with coffee). As a baking bar, it has performed marvelously. Flavor is rich and exactly what you'd expect from top-quality ingredients. Stores well in cooler environment (my basement) - has barely started to bloom after nearly a year when kept well wrapped. Well worth the price!!

    What could be more beautiful than 11 pounds of dark chocolate sitting on your counter? Well, 11 pounds of dark chocolate that is the most delicious you've ever tasted! The whole family LOVES THIS CHOCOLATE! We eat it scraped from the bar, sprinkled over ice cream, melted with toasted nuts and shaped into small candies, etc.! Great chocolate flavor, rich, and deep. Not bitter like some dark chocolates. No over-roasted flavor. No off flavors. Just a great, healthy treat with all those terrific antioxidants.For makers of molded chocolate candies: this chocolate tempers easily. Once tempered and molded, it has a beautiful sheen and perfect texture on the exterior of the molded candy. Lovely.

    I bought this two kilo, 11 pound block of dark chocolate around June 2014, figuring it would take me 8 months to eat it all. Like a really large Nestle's candy bar with the lines that allowed me to split it into 9 like-size pieces each weighing approximately 1.22 pounds, which I then put in Freezer bags and put them in my freezer. I then finely shred one frozen block at a time which fits perfectly into three Crystal Lite containers. I then mostly add a tablespoon of shredded dark chocolate with my morning oatmeal or on ice cream or since I'm making my own ice cream now I put some in my ice cream or frozen yogurt recipe or on pancakes or waffles. Each container seems to last a month, so three months to a block with two blocks to go, 7 blocks have lasted me 18 months. I won't need to buy another block until May 2016. Obviously since I am but one person you'll need to judge your use accordingly. I like the taste, just enough sweetness, but still bitter, yum.
