For a while now I've been using Hoosier Hill's cheddar cheese powder if I want to make a cheese sauce for whatever noodles I want (usually ramen). It's not really designed for the purpose, though, and doesn't quite produce the classic Kraft flavor profile I'm looking for, although it's darn good. Last year Kraft introduced a shaker of their own signature orange powder, and it was amazing, but it was also short-lived. So I thought I'd finally give this a try.This review is based on the strength of one use, but suffice it to say I'm thrilled with it. I made two packages of ramen without the flavor packet (that's way too much ramen for one person by the way—learn from my delicious mistake!), and I scaled down the recipe on the Big Daddy box to 3/4: so that's 1/4 cup powder, 3 tbsp. butter, and 1/4 cup of milk. I did save a little of the water, but not a lot. This was perfect for covering two packs of ramen, so for one pack, just use 2 tbsp. powder, 1 1/2 tbsp. butter, and 2 tbsp. of milk.This had a very classic blue-box flavor for me, even more than I'm used to getting from Kraft anymore. In a way it reminded me of that certain indefinable something my grandmother's mac & cheese had. She was making the same blue box, but hers was somehow better despite having all the same ingredients. It tasted just right and was scrumptious, and didn't have a big clumping problem like I get with the cheddar powder. However, I expect the lack of clumping was because this was a fresh package and that will change in the future; if so, sifting works just fine.So I'm excited to use this on other pastas as well whenever the mood strikes me to have that great blue-box experience but with a different noodle. And ramen cooks really fast, so I'm sure I'll still use it mostly for that.Update: I've used this quite a few more times now and I have discovered it can clump a bit if you try mixing it the same way you would a normal Kraft mac & cheese box. The powder seems to do better when you're mixing it into a warm liquid. If you mix the sauce in the same pot as the pasta, I suggest scooping pasta to the side, putting the cheese powder down, adding the butter and milk, and letting it hang out a minute or two while the milk warms up a little. Also I've discovered this doesn't work well for large pasta, unless you do something to thicken it; it's really best with small noodles. I still love the flavor and it hasn't clumped up yet in the container like the cheddar powder normally does.Update 2: Three years later, I've reordered this product multiple times. This is a staple in my pantry. I use it for ramen & cheese a lot, but sometimes I'll also add it to other cheese sauces to pump up the flavor and add extra emulsification power. It's also great on potato chips: throw some chips in a plastic zip bag with a bit of this powder, and shake it up for cheesy chips. This is more versatile than the plain cheddar cheese powder, I always make sure to have plenty on hand.

I have tried the white cheddar powder, the cheddar powder and now this big daddy mix powder. Have to say this version is by far the best tasting. The only negative I could find on this particular version of their cheddar powder is in order to get that robust flavor. You need to add a little bit more than with their standard cheddar powdered version.But man, oh man, does it bring you back to childhood, makes me feel like I’m eight years old waiting for Mom to drop a big bowl of that craft cheesy macaroni in front of me.I figured I’d leave this review with my own typical mac & cheese recipe using this powder.In a blender cup or blender of your choice add140 g low-fat cottage cheese 35 g big daddy cheese mix30 g fat-free shredded cheddar cheese1/4 cup unsweetened almond milk4 ounces cooked pastabilities, low calorie pasta, which you can purchase on Bolo taste so, so good like the real deal just cook for an additional 4 to 5 minutes.Boil your pasta until your desired texture and in that blender cup blend all cheese and ingredients and then when pasta is drained, put back in the pot and mix with the cheese sauce under low heat to get the cheddar shredded cheese a little bit melted. Half the time I don’t even do it. It just melts on its own with just the hot pasta alone in the plate. I topped mine off with a little black pepper at the end and I add proteins , like chicken sausage, etc. But that is up to you, but it makes the perfect amount of food.Today I made this and I added two chicken sausages and some chicken, shredded breast meat and some bell pepper and with all of that plus the recipe included it only came out to 690 cal and I could barely finish it. In fact, I saved what was left for dinner tonight to have as a side without having to go over my calories. Good luck and enjoy. Hopefully my comment helps someone else.

I am the only gluten free person in my family, so I use this powder to make single servings of gluten free mac and cheese. I have tried several recipes, but the yummiest and easiest with most consistent results is as follows:1 Cup noodles, cooked according to package instructions1/4 c whole milk greek yogurt1/8 c cheese powderBoil water and Cook noodles. While they cook, in a small bowl, mix together cheese and greek yogurt. Drain pasta and return to pot. Add cheese/greek yogurt mixture until heated up. DONE! Over! So easy. And delicious.

I was excited to try this after reading multiple reviews that stated the flavor was very cheesy and you didn't even need the full 1/3 cup recommended per serving to get a strong flavor HOWEVER I did not agree and I was very DISAPPOINTED. I love the flavor of Kraft but I like my mac and cheese extra cheesy so I typically prepare Kraft with only 1/2 a box of noodles and a whole packet of seasoning so the flavor is stronger. I decided to try this product because I was looking for something healthier that I could mix with any type of noodles or rice. I had no issue with mixing or clumping and it creates that classic Kraft unnatural orange color but the flavor fell short in my opinion, it does taste very similar to Kraft but it was NOT CHEESY ENOUGH for me personally. I followed the recommended portions of powder, butter, and used slightly less milk with macaroni noodles. Of course it would be easy enough to add more powder for a stronger flavor but considering the container only comes with about 3 1/3 cups of powder or 10 servings following the recommendations, for $15 it would not be practical to use more powder.

This is delicious for a quick Mac and cheese. You know it's not full of unwanted chemicals like processed foods. Great scalloped potatoes as well

Great tasting and awesome price
I loved it. I made the batch recipe X 4 to feed my giant family and it turned out fantastic. We all enjoyed it very much. Nice cheesey flavour, not too strong or salty. Was super creamy and covered all our noodles very well and wasn't runny. I used a whole fat milk to mix it with and it was just awesome. It's going to be my new kitchen staple for quick meals for the busy nights.Thanks for an awesome product.
Not as hard to mix in as some folks here state!
First off, I use this as an addition to KD, as the modern KD doesn't taste anything like it used to.I'm not sure if this is the normal way people make KD, but this is how I have for 30 years, and it works out fine adding in this extra cheese powder.- Boil pasta ~8min.- Drain pasta (DO NOT RINSE).- Immediately return pasta to still warm pot.- Add however much butter you like. I don't measure, I just eye-ball it till the noodles are well coated.- Add in a dollop of milk (basically just enough to cover the bottom of the pot) and stir till everything is coated and you don't see much milk in the pot.- Dump in the KD packet PLUS 1-2 spoonful of this cheese powder (or more, up to you).- Then just mix, and mix, and mix, and mix. Eventually all the clumps from the beginning get folded into the mix, and if needed, you can splash in some more milk to thin it out.10/10. Made me love KD again to the point where I have had to limit how much I eat monthly.
Cheese please
I bought this product for a few reasons one being for sprinkling on popcorn and mac and cheese.The thing I like about this product is that it gives you the ability to add a cheesy flavor to your food even if you do not have cheese in the house which is nice.It has a nice flavor it's not too overpowering. I didn't use a lot in my mac and cheese but with a little bit of milk and butter it's a really nice addition to your food.I really love the fact that this product has no artificial colors added in. for me the last chemicals I consume the happier I am. Thank you for giving people a choice in the matter.I added picture so you could see the product in full and the last picture is a size comparison.I would highly recommend this product to have on hand if for no other reason then to have an easy accessible means to add cheese flavor to whatever you're cooking and if you're like me and don't always have cheese on hand this really is a nice way to add that to your food.
Great taste, great KD replacement, hard to mix
I am... was a kraft dinner addict... I would keep 5 boxes of original, shapes, sharp cheddar, 3 cheese and extra creamy at home... however a couple of months ago, they started to taste very bad... I thought I had a bad batch but more and more box would end up being bad... So I had to search for alternative...I got my first jar of this brand today (because the KD one is taking forever to arrive) and I couldn't wait to try it out :)I must say I was pleasantly surprised by the taste and smell of this cheese powder. It is NOT KD (obviously) but it still has a very nice and mellow taste.The powder was kinda hard to mix with pasta, as others noted it would clump together a lot... (I tried it directly with some margarine and did not use milk), so i ended up with a couple of clumps sticked to the bottom of my "pasta pot".. (sorry I am french and do not have a large cooking vocabulary)I will try in the next few days making a sauce with margarine and milk next time... But even as is, the taste was really good so It will be nice experimenting over the next few weeks to find out the best way to make cheese pasta.Hope it helps someone in a similar situation to give it a try :)
