It may be inconvenient but you are better off breaking this down than buying the chunks. The chunks seem to have a plastically off flavor and come partially melted. This massive candy bar comes in smooth and tastes like it should.

Delicious chocolate! Huge block, arrived in great condition. Used it to make cakesicle and chocolate covered Oreo treats. Easy to temper and great to work with! Much better than using coating/compound chocolate, in my opinion.

I find this chocolate a bit too sweet for my personal taste, but it behaves well. For those wanting a more detailed description, this is Callebaut Recipe No CW2NV. The chocolate contains 25.9% min cocoa solids, 22.7% min milk solids and 33.9% min total fat. It has a “2-drop” fluidity, so it is suitable for ganache and other baking applications, but not enrobing or shell molding (the package indicates it can be used for shell molding but I find shells made with 2-drop chocolates too thick). Despite being a bit too sweet, it is well balanced and makes a good base chocolate for infused ganache sand mousses. The price makes it a good workhorse chocolate.
