Unlike sugar, jaggery is very rich in minerals, predominantly iron with traces of other mineral salts. While most of the iron in it comes through its low processing, the other minerals come right from the sugar cane juice, since this juice does not undergo refining or bleaching of any kind. So, jaggery is a very good source of minerals for the body. In some cases, jaggery is less likely to give you acidity when compared to sugar. There is no good explanation for this, but this is seen often. Even doctors suggest switching over to jaggery when somebody is having acidity due to sugar. The pieces are so rock hard they are unusable as is. I discovered, like you might do with brown sugar, that you can add a slice of bread to the bag. That pulled out moisture and I was able to crumble the pieces or they dissolved in hot water.

This is a very dark strong flavored jaggery it’s my personal favorite ( I miss the old foil bag it used to come in it was a better bag) but the crystals are still the same.

Use with my " cold brewed" tea. Adds a nice taste. I break the larger pieces into a manageable size and it dissolves as the tea " cold brews" over 24 hours. Very rustic sugar. Abit of trouble to use as has to be broken up from the very hatd pieces you receive / I put it in a folded piece of foil / and use a small mallet the store the broken up product in the original package. Worth the effort though I think

Interesting, since this is something I knew nothing about. Large crystal chunks, I would simply place one in the bottom of the coffee maker carafe before turning the switch on. Very sweet, like a concentrated sugar.
