The most important to me is that it is organic, but the second most important thing is that it has a higher temperature rating than other starches such as corn starch, so your oil lasts longer and you can also use higher temperatures when cooking with avocado oil that has a high flash point/temperature.

This is recommended by Dr. Hyman as a way to help your digestion and Microbiome to get back intact after taking an antibiotic. My boyfriend, however, never really took it after his antibiotics ended, but I added it daily for a while and certainly had no stomach issues with all taking it. I will keep it for thickening sauces, and I may add it to my daily regime someday again. Nice flavor added to water.
