I wanted dried shiitake from Japan but was a little hesitant buying this because of the price. I'm very glad I did. You don't need much to get a lot of flavor (umami) from these dried shiitake mushrooms. I've both donko and koshin types from this source. Donko is my preference because of it's meaty texture and depth of umami flavor. Makes a wonderful broth base for warming soups on winter nights.

I'm not fond of store-bought mushrooms because they often have no taste, texture, vitamin D or trace minerals. These mushrooms have everything I want, and they reconstitute wonderfully, tasting creamy, deep, and very slightly sweet. Perfect for Umami base, and excellent with pastas and beef. Buying again.

I rehydrate these in the fridge overnight - keeping them in cold water. The longer you keep them soaking, the softer they become. Also they do soften some as cooked. I change the water each day, rinsing them. I don't personally like the stems so I remove them and just use the cap. They are thick, rich and delicious. I most use them in a ramen or udon base. They are the best bite of soup - so I usually save it for the very last. These are grown on a Japanese mountain side. In my opinion this matters in taste. Shiitakes are mushrooms and should taste a little earthy and these do. Having said all of this, I never hesitate to update my reviews should new info seem useful. 5.0 out of 5 stars Quality "Donko" type shiitake mushrooms
These are good quality log grown Donko Shiitake mushrooms. The Donko type have a thicker cap, less open. These have a rich meaty texture when re-hydrated. A good trick to getting these completely soaked it to use a large deep coffee cup(if you're doing 2 or 3) and place the mushrooms cap side down. I have found a small soy sauce dish that nearly fits the diameter of the cup. I start to fill the cup till they float then I carefully place the dish on top then fill the cup to the top tapping to get the bubbles out. You can speed the process of soaking by adding boiling water. I typically soak overnight with cold if I'm planning a dish. The soaking water is great to use in any dish as an umami boost! Just strain it.

We have never had a dried shitake so flavorless. They seem to have a chemical taste. Surprised at how few shrooms were in the packet. We chose these because they claim to be grown in Japan. Good fragrance during soaking but it went downhill after that.

Fantastic tasting donko shiitake mushrooms from Japan! I use these mushrooms with kombu seaweed to make soup broth...I first lightly dust off the caps with a (barely) slightly damp towel and blow on them to remove dust/debris... Then I add them to a mixture of water & kombu... Boil... And push/dunk mushrooms into broth so that they become water saturated to sink into the broth.After the broth turns into a light brownish color, I then slice them to add to entrees.This brand is One of the best I've used. Its fresh tasting, meaty, & full of umami!

These dried mushrooms are incredibly delicious. I used them in a haricots vert recipe instead of regular mushrooms. The difference in taste is amazing!

Li consiglio per qualità e resa nei piatti
Ottimi funghi dal sapore intenso. Tra i tanti funghi disidratato che ho preparato questi sono i migliori. L'odore intenso una volta ammollati in acqua fredda si sente, per ovviare al problema ho messo la quantità necessaria in un vaso di vetro con coperchio e coperti di acqua li ho riposti in frigorifero come da istruzioni. Aggiunti ai ramen a pezzi e cotti hanno sprigionata un profumo e gusto unici.

Happy with the quality. Very rich umami. Very fragrant compared to other I have tried including korean and japanese. 3rd time ordering. Prefer this brand's Donko version for its thickness (plump)
