Keeps its edge, and the single bevel was done to perfection. I had to de-burr right near the handle but not a real problem as that is not a normal cutting area. The balance is fine and it slides through the fresh tuna without causing damage.I just hone it right before use and It keeps me happy.

This knife is pretty darn sharp and comfortable in my hand. It went through the Rib Eye steak that I cooked like butter. It is a welcome addition the my tools in my kitchen.

It's an awesome knife, but I just received it today and the wooden sheath I got with it was warped it's a straight blade, and the wooden handle had a nick in it. Very dissatisfied.

Great overall sushi/sashimi knife
Great knife for the price, razor sharp and the finish is spectacular. Comes with a nice wooden sheath which is a nice touch. Knife is light but still weighted enough. I use it everyday when I do sushi at work.

It hints in the add it is made in Japan but is a Chinese made knife, still nice but would of chose another knife for that price if I knew
