5.0 out of 5 stars Beautiful Knife, Overkill for Sushi Rolls
The knife looks amazing. It's well constructed and came hair shaving sharp out of the box. It's a bit too large for just slicing some hand rolls though, in my opinion. I think this thing is meant more for breaking down whole Salmon and Tuna than just slicing some rolls. Don't get me wrong, it slices rolls very well, but you only need a few inches of the blade to do that, not 10.5 inches. Most of the length on this blade is never going to get utilized in my kitchen. I'll still keep it as my dedicated Sushi knife, until something better comes along at least. ;)

It's extremely sharp and cuts very fine slices of fish for sushi. But, that's it's only real purpose, it does no other cooking task. It just does that one task amazingly well.

I returned mine, however this is a STUNNING Knife. I don't claim to be a professional cook, or chef. I do it as a hobby. The reason i returned my Shogun Series 'S' 10.5" Blade, was merely due to the fact that it was so beautiful and i didn't want to damage the blade when sharpening. on a scale of 1-10 (10 being the Sharpest), i would give this knife a 6.5-7 It could have been sharpened to a finer and sharper point. The tip of the blade to me should have matched the sharpness of the rest of the blade. The Ago (heel) of the blade that goes into the handle/Collar looked like it wasn't polished with a finer stone and still looked like the groves from the stone or wheel that cut it out. had a roughness of about a 5 on a scale of 1-10.The blade design with the design thats supposed to mimic what i think to be a low layered Damascus steel is actually recessed and even on the back side of the blade almost to the sharpened edge as well as all the way to the spine. i personally feel like this would be messed up if i went to sharpen it. I didn't want to feel like i was having to get water out of those pits when cleaning and potentially rusting. I just felt like those would be pits where debris could hide.The blade is quite heavy, which could help cut through the meat of your fish with ease, but i never actually got to test this.Over all, I feel this Yanagiba knife would be perfect for display, but i couldn't see myself using this blade. All my other knives are Dalstrong Shogun Series, and love them all! But decided to go with a more traditional look for the sushi I'm learning to make.

Beautiful as all Dalstrong knives are. Wonderful for cutting through fish with 0 resistance. It is incredibly sharp, heavy, solid, and durable. Treat it with love and it’ll last.

Update:Added one star due to Dalstrong's strong customer satisfaction approach. They reached out and worked with me to improve my experience with the product.It's fair to start by saying I'm hit or miss on Dalstrong products (see my other reviews). I'll also say I've been really really looking forward to this knife as it's been on back order for a LONG time. Comparing this to my white #2 steel Yanagiba.This is a MISS and greatly disappointed me.I wanted a stainless steel Yanagiba as blue/white steel becomes tarnished as you can see in my side-by-side picture with another Yanagiba.The good:It looks pretty for someThe bad:* Dull relative to my other Yanagiba* Could not identify a uraoshi. I did straight edge the back and there is an urasuki although initially I thought there was not. Without the urasohi I suspect sharpening will quickly remove the urasuki.* tip was well rounded as you can see next to my other Yanagiba.* Uneven grind on tip* engraving and lack of well defined uraoshi/urasuki will complicate sharpening and leave the knife looking odd after sharpening, even on 8000 grit stones.I haven't cut with it yet as I'll likely be sending it back. It's noticeably dull with the touch of a finger. More dull than all of my other dalstrongs which should not be the case for a Yanagiba. It should be the sharpest.I suggest they try again with a different steel. Perhaps BD1N/Hap 40/SG2/ZDP-189. With it being a powdered steel it will take a finer edge more comparable to white #2/#1/blue #2/#1/blue super.2-stars as somebody will be happy with this thing, just not me.

Awesome knife. Super sharpe and makes you fee like a Ninja when you’re cutting food (especially good for cutting sushi rolls).

For the price it is very good! A littler too thick for me but still works and it is very durable. It holds the sharpness for a very long time. Also, I didn’t like the carvings on the blade as well, it holds some dirtiness in it, hard to clean.

Das Messer ist erstklassig verarbeitet und liegt sehr gut und balanciert In der Hand. Die verwendeten Materialien machen einen hochwertigen Eindruck. Griff und Klinge sind sehr schön ausgeführt. Die Klinge ist nicht flexibel und verfügt über einen sehr guten einseitigen Schliff. Auch für ein vielfaches des Preises dürfte es schwierig werden etwas Besseres zu bekommen.

La finitura della lama toglie il fiato, l'impugnatura è sagomata alla perfezione, ottimo il bilanciamento del peso...all'uscita dalla scatola ha già un'affilatura perfetta.Cosa si può volere di più? ah, ha anche un proteggi lama in legno a corredo!Perfetto
