I keep dried mushrooms in my pantry. I dont use them all the time, but just enough to warrant my purchasing a huge 5 lb bag-- best price per ounce too. Worry about them going bad? Nah, dried mushrooms last indefinitely. A lot of foods are like that. Store them well, and they are going to be totally fine for years to come. Good prepper food. No shortage of info to be found regarding this. That being said, my bag has a best by date of Feb 2025-- couple years out. Best by is really only an guarantee of freshness, taste, and nutritional value. After that, it is possible for there to be a decrease in quality, etc, but it depends on the food. Dried mushrooms are not affected by time so much.Any dried vegetable or fruit wont rehydrate to perfection. Soaking is very important, not just tossing in when cooking (ie, dont think that they have been "soaked" because they were added to a long simmer soup). I find it best to soak before actual cooking or other uses. Stems take way longer to soften up, so it may be best to remove those as soak separately.I like shiitake for its mild flavor and high nutrient value. I ay use fresh white cap or portabello mushrooms then add in some dried (well, soaked) shiitake to give added boost.Huge bag. Like size of a bed pillow. I dont store them in any fancy complicated way. I take out what I think I will use over the course of a month, then just tape the bag closed and store in cool dark area. If I am motivated, I may divide these up into jars, baggies, or mylar bags just for ease of storing. If not, the mushrooms are fine in the bag they came in.

I use it to make udon broth along with kelp and daikon. Simmer for minimum 40 mins or until everything is nice and soft - then add broccoli for additional 3-4 minutes. Pour the whole thing (not just the broth but everything in it, cos it's all gonna be delicious!) over cooked udon noodles and add a little salt and pepper to taste and garnish with spring onions MIAM !!! ^_^

The 5lbs dried mushrooms are easy to cook with. I rinse them twice with tap water, then soak them up in warm water for overnight, then cook them with meat, or put them in chicken soup. I bought a lot of similar ones in small packages before. Thought I'd try this big volume one with "scribe and subscription". They are just as good as I remember, chewy and tasty, with nice strong fragrant. And these mushrooms are decently clean, only need a bit of rinsing before soaking up. The only thing that's not as perfect is that when they arrived, the bit plastic bag was not vacuumed and tightly pressed those mushrooms together, instead it's loose and full of air, and those mushrooms were just tossing around inside when moving the bag. The description on the product page on Bolo says specifically that it's vacuum packaged. So I sincerely hope that next time when the next batch arrives, it's indeed vacuum packaged. When air gets in, and moisture gets in, dried goods can get moldy and go bad faster. Then I don't know when to start counting the time period that those dried mushrooms could stay their freshness.

These are awsome! Delicious and taste just like fresh when soaked and used in cooking. Great for gravies, stir fry and soups or stews. Can also be stuffed and fried once they are finished soaking and rehydrated.

Minor quibble, the packaging plastic is kind of "brittle" or stiff, ended up tearing with a large gash though I thought I was being quite careful while opening. Nothing another outer trashbag layer couldn't fix but still.

These I was hopeful about because I like mushrooms . But they showed up and the bag was broke. Open in the box and they were loose and all over. Issue number 1. Second is they smell and taste so strong for the few I could salvage. They take over where ever you put them and they are impossibly hard. The taste makes you feel like you couldn’t speak to anyone for days type strong.
