    This made a fabulous loaf that we all loved even my non-rye bread lovers! It's a definite rye taste but lighter in color and milder. The classic commercial rye bread in my mind uses a different rye flour. But this is so much better for all the family.

    I like to feed my starter culture a variety of complex wheats with some of the bran and germ still in the flour. This flour works great for that and it really helped liven up my starter culture for sourdough. I usually add about 50g of this to my sourdough boules and it helps add a little more flavor to the bread.

    Rye flour is a little pricey at the moment and I don't like the taste of rye but this makes a good starter with just flour and water about 50/50 ratio. It's taken anywhere from a couple days to a week to culture the starter. I use the rye starter and all purpose flour for the bread. I've also made starter from all purpose flour. it's just faster with rye flour and the taste of the bread is a little different. Not better or worse. Just "different". All I needed was a little rye flour to make the starter. I still have most of the bag. I couple times I accidentally forgot to save some starter, so I had to culture the starter from scratch again. but now I have a system so this doesn't happen. Keeping the starter in the fridge keeps it dormant for weeks. Great flour.
