I can’t eat wheat, and I’ve tried every gluten-free pasta there is. Buckwheat is not related to wheat. It's the nutritious seed of an herbaceous plant, and has a very earthy flavor that you have to get used to. I eat cooked buckwheat groats for breakfast, and they do have a strong flavor. I was expecting this pasta taste the same way, but it really doesn’t. It’s got a very neutral flavor and a great texture. What I really like is that the noodles aren’t very starchy and don’t stick together like rice noodles tend to do. It does have a grayish color, but once you put sauce on it you don’t notice it. Love these noodles! I wish they made them in different shapes.

I love this soba. The flavor is excellent and is of unadulterated buckwheat. The bundle size is very handy--one for a lighter snack, two for a heavier snack or lighter meal, more for . . . more. The noodles are a proper length, too, and they don't easily fall apart on you. The boiling liquor is tasty, as well, especially with a splash of my favorite dipping sauce.The only caution I have is that they really do need a good deal of cooking. The instructions say 4-6 minutes. Anything under 6 resulted in undercooked noodles, and they were nearly inedible after only 4 minutes.

I have been eating 100% buckwheat (soba) noodles for a few decades. Normally they are quick to cook and very tasty with a nutty flavor, and the texture feels like a real noodle. As soon as I opened the box I could see they weren't made of buckwheat. They looked like some kind of rice noodle that was dyed a light brown. They did not cook up well, and they remained chewy no matter how long I cooked them. I tried to eat them, but they were so off-putting I started to become nauseous and had to throw away the entire meal. I tossed all the boxes into the trash immediately. I should have know the price was too good to be true. Please, do yourself a favor and stay away from this brand.

Purchased for a special occasion dinner where many of us had food intolerances or sensitivities. Maybe I just need to learn how to cook noodles, but these tended to clump together very easily. They do taste good, and are a nice wheat alternative. Due to cost, would not make them part of my regular diet.

I'm a big fan of soba and buckwheat noodles. What sold me on this product is the organic, quality ingredients, and it is sodium-free! These noodles are versatile and can be used in many recipes that are only limited by your imagination.My favorite way to eat these is Zaru Soba (cold) style. Cook noodles as instructed, drain, and quickly add to an ice bath to stop the cooking process. I bought a soba dipping sauce at my local Asian market; I added some furikake and wasabi. Dip the noodles in the sauce and slurp. Yum! I've also made chili crispy noodles with grilled chicken.

Purchased to be free of nitrates, which causes cancer according to studies. Amazing to see only 22 PPM nitrates in this Sungiven organic pasta in distilled water. Other pasta's have 160 to over 600 ppm per instrumentation. Taste, texture were very good. Cooking time was shorter than usual.
