While this does appear to be high quality sugar, the flavor left something to be desired. I was very hopeful that this would be a great addition for a light maple flavor to my baked goods, but unfortunately it fell short. I tried this out as a 1:1 substitute for the white sugar in cinnamon rolls and then as a brown sugar substitute and a topping in a pumpkin loaf and was disappointed with both. I tested it out with the cinnamon rolls and found that they tasted slightly sweeter than my usual way of making them, but decided that the maple flavor could have been overpowered by the icing. I tested it out again in a pumpkin loaf and used it as a topping for good measure. Unfortunately, the flavor was similar to the cinnamon rolls. Slightly sweeter with a lighter sweetness, but no maple flavor.While it was a bust for baking, I did not test this out as a topping for something like oatmeal. It may have a stronger flavor if used directly as a topping. As I didn't test it as thoroughly as I could have, I decided to rate it as four instead of three stars.Overall, while this does appear to be a high-quality sugar, it didn't work well to add a maple flavor to baked goods. While it may perform better as a direct topping, $18.99 for a pound does seem steep for this sugar. If you don't mind taking the financial hit, I would recommend trying this out for putting in your coffee or oatmeal. However, I would recommend skipping this one if it's out of your budget or you're looking for something to put into baked goods.Edit 7/20/22: I decided to change my rating to five stars after testing this out in a frozen custard in lieu of regular sugar. It made some of the best custard that I've ever had. The maple flavor came out beautifully and was perfectly accentuated with a vanilla bean. I am going to change my recommendation: use this in desserts where the flavor is lighter to allow the maple to come through. The recipes I tried it with initially had a lot of spice and overpowered the maple whereas the vanilla custard allowed it to shine.

Finely textured this one pound pouch of USDA certified organic maple unlike some is not grainy but instead it is smooth. In addition to the maple flavor the texture is airier than brown sugar and it just melts in the mouth. There is only one ingredient—organic maple sugar—no additives or other inclusions.Delicious stirred into a cup of tea, sprinkled on a bowl of oatmeal, used on buttered toast in place of cinnamon sugar, used as a topping for cobbler or muffins, added to a marinade or dressing, etc. To estimate shelf-life at the time of this review in June 2022 the expiration date is 35 months in the future but dates will vary. Excellent.
