I ordered this tart pan because I like to bake, and I was intrigued by the design of this pan with the removable bottom and the included crust shaper. I love baking quiche and all kinds of desserts, so I thought this would make a great addition to my baking pan collection. I was right.This is my first time using this style of baking pan, so I'll tell you what I learned.If you're blind baking a crust in this pan, depending on your crust recipe, expect some shrinking. If this happens some of the filling my spill over the crust and run under it. If this happens it will leak out of the bottom between the base and the ring. (Ask me how I know). So, it's a good idea to place this on a baking sheet to catch any filling that may leak out. The crust shaper works fine, but if your crust shrinks it may be somewhat misshapen. That said, the filling may fill in the gaps as it did with my quiche (see pics). Blind baking this with the shaping ring in place and filling the crust FULL with pie weights would probably mitigate some of these problems. I'll be doing that next time.This pan is truly non-stick. I was able to pop the quiche out of this pan easily, after it was cooled, by pushing up on the base of the pan. It then slides easily onto a plate for serving. It turned out great!Pro Tips when using this pan:Don't over-fill the crust! Over-filling will cause the filling to flow over the crust and leak out of the bottom.Blind bake your crust with the shaping ring in place and use PLENTY of pie weights (on top of parchment paper, of course.) This should help the crust keep its shape.Don't lift this pan by the bottom as you will push the base up and spill your filling. Lift this by the ring only!In summary, I love this pan and feel inspired to try more recipes using it. There is a bit of a learning curve if you have never used this type of pan before, but it's worth trying it. Hopefully my tips will help or find other tips online. Overall, I am very happy with the performance of this pan. It works as advertised and is very easy to clean. If you love baking, you will love this pan.**Edit** I ordered the silicon pie weight that goes with this pan. It fits nicely (see pics both with and without the shaping ring), but with very little room to spare. Care will be needed to remove this when there is a crust in the pan. The weigh is plenty thick and heavy enough, and it has vent holes to allow it to lay flat and perhaps allow steam to escape. However, I'll probably still use parchment paper strips with this to make it easier to remove without damaging the crust. This will not work with a regular 10" pie plate because pie plates are smaller on the bottom, and this is a true 10 inches in diameter. If you are not ordering this for the tart pan on this product page, MEASURE the bottom of your pie plate to make sure it will fit, so you're not disappointed. Make sure to allow room to remove it without damaging your pie crust. I don't know how this will work for other pans, but I can recommend it for this tart pan. It's a little pricey at $15.99 for a piece of silicon, so I'm rating this - four stars.

I like the removable bottom for making my quiches and tarts and it helps to keep my crusts looking magazine perfect. The crust shaper is a handy little addition for beginners that aren’t used to getting their crusts looking like they want and also for us bakers that do. There was a little leakage from the bottom and I didn’t notice the crust shrank just a little compared to my old tart pan but nothing that a little tweaking didn’t fix. I happen to love carbon steel for a lot of things in the kitchen and this is the first tart pan that is carbon steel and so I was intrigued. I’m still on the fence if I love it or if I’m just a creature of habit and I think time will tell. I’ll continue using this for now to see. It’s a little inconvenient having to hand wash it but it’s much better than dealing with the rust you’d get if you didn’t. So far it makes a great quiche and a pretty tart.

I'm simply delighted to have come across this tart pan. It's cooked up a crust with a crumbly, firm cookie-like texture. I have no complaints with the size of the pan. I was a little puzzled when I read the title that it could be a pie pan and that was because of the height of the pan. And I'm pretty sure, anyone that bakes of sorts, would not really use it for PIES. In using this for a lemon tart, I first did blind bake the crust, using ceramic blind baking weights, then adding my lemon filling, the result, FANTASIC lemon tart. Also, I have made a spinach, mushrooms and shredded cheese quiche, that was a hit with the family! Yummy, talk about a good treat! There are so many different tart and quiche recipes out there and I would love to try many of them.I, honestly find this tart pan, with its silicone crust shaper, to be a positive addition to my collection of bakeware. even with the fact that it should be handwashed and dried. Without hesitation, I would gladly choose it again! And would recommend it to all that enjoy baking!

I make quiche 2-3 times a month and this pan has worked fine however it is a bit on the thinner side. It’s easy to clean (I only hand wash) and I like having the silicone crust shaping ring to help the crust edge to be more uniform and pretty. The removable bottom is also handy although mine got a little scraped up from the knife I used to cut our quiche.It’s an ok pan, I like the size and I’ll continue to use it, but I’ll have to be mindful of how sharp a knife I use or perhaps transfer my whole quiche to a large plate to cut it.
