These are definitely nice and of a heavy, sturdy quality. The blades are sharp and do a great job. I just feel that it’s all a little too much. A lot of heft to them and an overly large handle. Seem more for a classy, elegant look than ease and practical.

I shucked a dozen oysters with these, then came to write a review....and checked out other reviews, only to find many folks who supposedly are experienced shuckers who bend the knife blade. I can't say I'm a highly seasoned shucker....but having grown up on the south shore of Long Island, NY, shucked more than enough shellfish to know what i'm doing.I decided to wait until I shucked another dozen to make sure my first experience wasn't off. Sure enough...these knives performed brilliantly. I guess I'm not torquing the knife like some might....but I'm also a guy that has shucked a lot of oysters with cheese knives or whatever sharp, pointy objects are around because that's all I had on hand. These knives have guards to protect my hands in case of slippage, a big step up from cheese knives.I like the rags that came with it. I do always use gloves as well, but was nice to just throw the rags in the washing machine when done.I'm quite happy with these...and maybe they're not professional-grade...they're perfect for this amateur-grade shucker.

I was grateful to receive an evaluation set of these classic looking shucking knives, and I immediately put them to the test on a dozen fresh oysters. I loved the appearance of these knives from the photos, since they are similar to the classic Frenchman-style oyster shuckers. Unfortunately, they are not as impressive looking in person, with a less than desirable fit and finish. The tip is just not very pointed or sharp enough to penetrate the hinge, so a lot more force is required. Because of the rough finish, the handle instantly becomes very uncomfortable with a lot of hot spots that just dig into your hands. Once the hinge is separated, I like to cut the adductor muscle to release the lid, but these blades were too thick, short and really not sharp enough to get that job done, so I ended up settling for partially torn up oysters. Still, I persisted in popping open the dozen oysters when about halfway through I noticed that the first blade had become horribly bent (see photos). I switched to the other knife which struggled to open the remaining oysters and ended up getting pretty bent up as well. The listing claims that these are, “Made of high quality 3Cr13 stainless steel, professionally polished will not bend easily.” This is simply false, as anyone who actually bothers to test these out will quickly discover. In fact, I think these knives are potentially very dangerous because if they broke while applying great force, they could lacerate you badly. That, of course, is what the supplied towels are meant to safeguard against---not for handling hot oyster shells. Shucking knives and towels are used on live, ice-cold oysters. Heating oysters in their shell, like in an oven or on a grill, will cause the oysters to die and their shells to open on their own. There is no need for a shucking knife set with hot oysters.

The media could not be loaded. I enjoy oysters at least once a month and know how to shuck. These knives are very poor quality and bend very easy. Look elsewhere.
5.0 out of 5 stars Very Nice Schucking Knives
These are very nice oyster shucking knives. You get a pair of knives and a pair of soft towels to hold the shell fish to keep it from slipping. If used, the towels should help prevent injury from oysters slipping in your hand. The knives have nice wooden handles and very strong blades. The body of the blades are probably 1/8 inch thick stainless steel. They taper down to a semi sharp tip that should be easy to wedge between the shells of an oyster or clam. The blade will not cut a finger if you run your finger across it at normal pressure although the point could probably do some damage if you lose control while opening. Each knife is easy to grip and control and I doubt that the blade will bend or break even on the toughest oysters. It should be relatively easy to penetrate an oyster and give it a twist to open it. Will be using these to schuck clams for clams casino.
3.0 out of 5 stars Not bad, handle isn’t super grippy, no upturn on the tip but worked with West coast oysters
I was concerned about not having an upturned tip, and having a serrated tip, as I’ve never seen one like this, but I shucked some West coast oysters with no issues. I don’t get to see a lot of the east coast ones, but they’re easier, I think, to shuck anyway. The handle is square and wood, so not very grippy or comfy for the hands, but I think unless you shuck oysters for hours, you probably won’t notice. They seem sturdy, but hard to tell except over time. The metal guard is nice around the handle, and definitely helps with leverage. Very good price for 2 of them. The cloths are nice and soft, but not really what you want to dirty up shucking oysters. I wouldn’t consider these the best knives, but for the price, they’re functional.

These knives are very well designed and with a nice though on ergonomic as to where to place your thumb to enforce a stronger grip. Don't get me wrong, you still have to be careful and it is always recommended to wear a mitt (rubber or metallic) on the other hand so if you slip, at least you don't end up in the ER.With the wood handle being on the longer side, it gives more grip but also more leverage to pry open oysters or other shellfish which is perfect. The less effort, the faster on the table.It also comes with 2 wrapping towels for safe transportation AND for drying your hand as you are using them which is great. Keep it in the towel and you don't have to look for anything when ready to do a seafood feast.
