I recommend getting some oven thermometers for each level and learn the difference between the temp settings and the actual temp. It holds the temp well but for 140-150 I was having to set the temp to 120-125.

I can hold the biggest briskets i can make in this one. Wider than a catering tray for easy loading. What I like best is that there is not digital mumbo jumbo. All analogue dials and controls. Stays within 5 degrees of set temp. What else could you want. I have used it for a year now for almost 20 briskets so far. The only reason I went with this one is because there are only analogue dils. These are much more reliable and durable. they just last longer than buttons with digital screens that go out, or buttons that stop working... so on and so forth.

This hot box food warmer has been great. Holds heat very well. It was able to hold a brisket and some pork butts overnight. I would totally recommend it for restaurants.
