    I've been experimenting with different recipes and wanted to try some of the shredded phyllo dough desserts. I ordered several different packages -- raw and dried. This one by far comes in the best packaging, with a reusable tin box. It's fresh and bakes up terrifically. As I continue to experiment, I'll need to order more, and this is the one I would choose again.

    I ordered this shredded kataifi to make Dubai chocolate bars. It's taken me awhile to gather the ingredients, but today I was finally able to unwrap the package and make the bars. The Kataifi was well packaged and I liked the reusable tin. It will come in handy for storing the leftover product. I did not realize how much 14 ounces was in volume. It's a lot! The kataifi was finely shredded and dry. My recipe called for breaking it up even smaller with a food processor, but I found a plastic bag and rolling pin worked just fine. My one suggestion would be to include a few recipes calling for this product. I have so much leftover, it would be nice to try another recommended recipe.

    I assume like most, my desire for homemade, delicious and affordable Dubai chocolate is what brought me here. This is definitely 'the good stuff' that you need to make your own DC at home, but as I learned, this kadaifi is a versatile, exciting and easy ingredient to use in a plethora of other sweets and dishes too!This always arrives super quick. The generous sized tin, full of product and completely wrapped/sealed in plastic. You get A LOT of kadaifi here, enough to make a large DC bar with enough product still left to experiment with other delicious Mediterranean dishes. (I can make 3 medium/average sized bars with 1 tin) You definitely want to hang onto the thick, studry, high quality tin too, as it's great for storage. Even when the kadaifi is gone and it's time to re-order, the tin is quite useful.The kadaifi, or shredded filo dough, is generously packed into the tin, but with care not to break or flatten the small, flaky, delicate and thin 'shreads'. I find that there are very few crumbs, broken pieces or powder left behind when the tin is empty.The ingredients are simple- wheat flour and water. I was under the impression that there would already be honey or some type of oil added, but to my suprise they weren't. Now that I have used this for sweets and savory dishes, it makes me appreciate how clean and simple it's made, making it more versatile than other options that include extra ingredients.And speaking of the wheat flour-I decided to do some research on how to make kadaifi from scratch (a long, somewhat complicated process) and I found over and over that the quality of flour used is pretty important. While it's impossible to know exactly what flour was used here, thanks to the only other ingredient included being water, it wasn't hard for me to further dry this out and bring it down to a powder. It was to notice that the 'flour' was uniform in color, without any specs of husk or bran. It feels silky between the fingers too, not rough or grainy. This tells me that Mixyway started with quality flour which gives the noodles a uniform, slightly off white appearance and delicate texture.The texture of this is pretty fun and reminds me of vermicelli, but a bit more delicate. It's crispy, flaky and very easy to work with. It adds an addictive and satisfying crunch (that isn't hard on the teeth) to anything it's added to.While kadaifi is used more or less to elevate or enhance foods it's added to, my curiosity again got the best of me and I had to try some on it's own.While there wasn't an explosion of flavor on my pallet, I did notice some nuanced flavors that were quite enjoyable. There are slight, clean earthy notes, speckled with hints of nuts. This also has an ever so slight but of sweetness. That sweetness however isn't sugary or added, rather it is derived from the flour itself. While I'm not sitting down to snack on pieces of this by itself, I did find that the light, crisp texture made it perfect for a salad topper or as a finishing touch on a meal, this adds an extra level of excitement and texture to just about anything. Further, it also impressed me how well this absorbs the flavors of the other ingredient incorporated with it.In the hundreds of videos I watched of people making Dubai chocolate, they all made it look really easy. I'm not much of a baker or cook for that matter, but I found that this is a very easy ingredient to work with. From the ease of measuring out the right amount and even to getting this shaped in a certain way (making baskets), working with this took away a lot of stress and anxiety I had. I'll even go as far as saying that this is actually a fun ingredient to work with too!My chocolate turned out absolutely delicious! I've continued to make it and despite the family and I agreeing to savor each bite, it's hard not to indulge every now and again. I've also uses this to make some delicious Bird Nest Baklava (Osh El Bulbul), maple walnut knefeh and mango cream knefeh. I impressed not only others, but myself too. This product makes it very easy to make deserts and dishes that not only look complicated and beautiful, but taste so good that it can literally bring a tear to your eye! (Anyone else ever have those food experiences that are so incredible that you cry? I know I can't be alone on this!)Seeing how easy this makes creating a variety of things, I have of course made a list of recipes I can't wait to try, with the next being first Kadafi cheesecake. While there is a generous amount packed into the tin, between the addictive chocolate and mouth watering knefeh, I've been going through it pretty quick. It was a no brainer to re-order more from this brand and seller. There is no need for me to seek out another brand, especially knowing that the taste and quality of this is exactly what I want/need.While I've seen frozen options at specialty or Mediterranean grocery stores, they have been hard to come by lately. And while they are priced a bit lower than this, I feel the volume is reduced as well. While this seems pricey, I'll (almost shamefully) admit that it has paid for itself now several times over- because I'm not buying the pricey, home made DC from the store/market anymore (where one, 'medium' sized bar is $22!) I can make about bars the same size with just one of these tins!So yes, I absolutely recommend this kadaifi. It's easy to work with and the quality is there. Just plan on this opening a door to some new and incredible recipes to try, outside of the chocolate.

    I’m no expert at Shredded Kadaif. I’ve gotten it before but my previous batch was pre-baked, which I found helpful. I ended up pre-baking this while I was making some bread so that I could use it as I had in the past. The tin admits that non-baked does limit the possible uses, however, I just put it in a big pot in the oven and stirred it every so often and it browned up just fine.Once browned, this is basically no different than the strands that make up shredded wheat cereal. It mixes nicely in a few recipes to add texture, but not a lot of flavor. There are official recipes, but I go simpler and make things on my own – just desserts so far.The large flat tin is nice, but I can’t think of anything I’ll use it for now that I’ve used the Kadaif, so it does seem unnecessary. Just sealing this in a bag would have been fine. If the tin were neatly decorated or something, I’d save it, but that’s not really the case here.
